A great cake recipe that has tartness of cranberries and sweetness of cake.

Ingredients

  • 3 eggs
  • 1 3/4 cups sugar (for perfect sweetness, 1 1/2 for less)
  • 1 1/2 stick butter, room temperature
  • 1 teaspoon vanilla
  • 2 cups all purpose flour
  • 12 oz fresh cranberries (1 bag)

Instructions

  1. Preheat oven to 350 degrees.
  2. Beat eggs + sugar until double in size and forms ribbons
  3. Mix in butter + vanilla
  4. Stir in flour until just combined
  5. Stir in cranberries
  6. Pour into 9x13 in pan
  7. Bake for 40 - 50 min
