A great cake recipe that has tartness of cranberries and sweetness of cake.
Ingredients
- 3 eggs
- 1 3/4 cups sugar (for perfect sweetness, 1 1/2 for less)
- 1 1/2 stick butter, room temperature
- 1 teaspoon vanilla
- 2 cups all purpose flour
- 12 oz fresh cranberries (1 bag)
Instructions
- Preheat oven to 350 degrees.
- Beat eggs + sugar until double in size and forms ribbons
- Mix in butter + vanilla
- Stir in flour until just combined
- Stir in cranberries
- Pour into 9x13 in pan
- Bake for 40 - 50 min
